Savory Green Velvet Soup
This soup is a delicious and easy way to get a ton of green vegetables into your diet. To make in a slow cooker, just put all the ingredients in and heat on high for 4-5 hours.
Ingredients
Serves 8
- 1 med onion, chopped
- 2 gloves garlic, minced
- 2 stalks celery, sliced
- 2 med potatoes, scrubbed and diced
- ¾ split peas, soaked for at least 4 hours beforehand
- 2 bay leaves
- 6 cups or water or stock
- 2 med zucchini, diced
- 1 med broccoli, chopped
- 1 bunch of spinach, washed and loosely chopped
- ½ tsp dried basil
- 1 tsp paprika
- 1-2 tsp cayenne, adjust to you spice level
- 2 tsp of salt
- Black pepper, salt, and cayenne to serve

Instructions
- Place onion, celery, potatoes, split peas, and bay leaves into a large pot with water or stock and bring to a boil.
- Lower heat, cover, and simmer for about 1 hour.
- Remove the bay leaves.
- Add the remaining veggies and spices and simmer for another 20 minutes.
- Let it cool a bit and then transfer to a blender in small batches. Blend until smooth.
- If too cool, return to the pot and heat it up again. This soup is best served hot!
