Savory Green Velvet Soup

This soup is a delicious and easy way to get a ton of green vegetables into your diet. To make in a slow cooker, just put all the ingredients in and heat on high for 4-5 hours.

Ingredients

Serves 8

  • 1 med onion, chopped
  • 2 gloves garlic, minced
  • 2 stalks celery, sliced
  • 2 med potatoes, scrubbed and diced
  • ¾ split peas, soaked for at least 4 hours beforehand
  • 2 bay leaves
  • 6 cups or water or stock
  • 2 med zucchini, diced
  • 1 med broccoli, chopped
  • 1 bunch of spinach, washed and loosely chopped
  • ½ tsp dried basil
  • 1 tsp paprika
  • 1-2 tsp cayenne, adjust to you spice level
  • 2 tsp of salt
  • Black pepper, salt, and cayenne to serve

Instructions

  1. Place onion, celery, potatoes, split peas, and bay leaves into a large pot with water or stock and bring to a boil.
  2. Lower heat, cover, and simmer for about 1 hour.
  3. Remove the bay leaves.
  4. Add the remaining veggies and spices and simmer for another 20 minutes.
  5. Let it cool a bit and then transfer to a blender in small batches. Blend until smooth.
  6. If too cool, return to the pot and heat it up again. This soup is best served hot!
